This Boteh is unique, rich in powerful spicy notes, made from the famous black lime "Limou Amani Sia" from Shiraz. This lime is a small lemon harvested while still green, before it is ripe. It is boiled in salted water for 5 minutes. This will prevent it from fermenting and spoiling during the rest of the process. Once boiled, the limou is cooled and taken to the desert where it is buried in the sand for 3 to 5 weeks. The limou bark then takes on a dark brown to black color, hardens until it becomes brittle.
The pulp dries out and takes on candied notes.
This Boteh gives off almost smoky, spicy, acidic, lemony notes.
In the mouth, the acidity is incisive and the bitterness elegant, with notes of candied citron and almost liquorice touches.
