Roquefort has a moist, crumbly texture and a tangy, sour, salty flavor. It is white to pale yellow in color and is marbled with blue to blue-green molds that give it its unique appearance and flavor. Roquefort has no rind. Its flavor and aroma are defined by buttery, caramelized, and smoky notes. If heated gently, Roquefort melts, but at high temperatures, it can separate.
La Maison du Fromage was created in 2011 with the aim of promoting goat cheese in Pouligny Saint Pierre.
