Mauri
Mauri, a 100% Italian company with a heritage dating back to 1920, has established itself as a prominent player in dairy production. Nestled in Pasturo, just a few kilometers from Lecco, this family-run enterprise now enters its fourth generation under the leadership of Nicoletta Merlo, the founder's great-granddaughter. With 12,000 square meters of production space, the company processes a staggering 150,000 liters of Italian milk daily, resulting in an impressive annual cheese production of 5,000 tons.
What sets Mauri apart is its unwavering commitment to its Lombard roots in Valsassina. The company places a strong emphasis on preserving the local dairy tradition and maintaining stringent quality standards while driving innovation. A testament to this innovation is the introduction of 'Caprì Mauri' and 'Caprì Light,' fresh cheeses crafted from both goat's and cow's milk, which pioneered a new market segment imitated by many.
Mauri's origins trace back to 1920 when Emilio Mauri founded it as a small artisanal venture. A mere nine years later, the company evolved into a fully-fledged business, establishing its Pasturo plant. This location, naturally suited for cheese production and aging, benefits from unique environmental conditions. The presence of oxbows, natural caves infused with characteristic warm springs emitting moist air, lends Mauri's cheeses a distinctive flavor and personality.
