The Fine l'Ultime Oyster undergoes a minimum of 30 months of cultivation in the Charente basin, reaching its peak excellence in the final stage of maturation. During the last phase, it is carefully placed at the bottom of a "clear" for a duration of at least 120 days, with 2 oysters per square meter, allowing it to fully absorb the essence of its terroir. This glossy development results in a wonderfully flavored and exceptionally fleshy flesh, characterized by delicate iodine notes and the expression of captivating marsh aromas.
