Mothais Sur Feuille is a cheese made of raw, whole, fresh goat's milk. This cheese is made by slow curdling and is aged on a chestnut or plane tree leaf, thereby pumping out the humidity and giving the Mothais "sur feuille" a smoother, creamier texture with a thinner rind.
It is disc-shaped, about 10 to 12 cm in diameter, and 2 to 3 cm high with notes of slightly acid taste along with a touch of orange in the color.
The traces of the presence of the goat in Poitou region since the Neolithic period. The raising of goats, a means of support for many rural families. Farmers made raw milk cheeses for their own use and consumption. Gradually, from self-consumption to the local sale of cheeses in the markets during the nineteenth century.
